Chef Thijs Vervloet embodies the classic, French-inspired cuisine. However, his cooking style is anything but outdated or heavy. He effortlessly combines refined nuances with rich sauces, subtle flavors and above all high-quality ingredients.
‘Maison Colette’ is more than just a restaurant. It is a place where exquisite gastronomy and warm hospitality go hand in hand, where tradition and innovation meet in a setting that feels like a welcoming home.

What’s in a name?
The name Colette refers to Colette Leemans, the grandmother of Chef Thijs Vervloet (born 1990), to whom he owes his culinary talent and hospitality.
Colette herself was a cook for many years, teaching Thijs the craft from a young age and inspiring him throughout his life.
In 2016, Thijs took the leap to open a restaurant in his grandmother Colette's house in Westerlo. Using her name as a tribute felt entirely natural.
Back to our roots.
After the successful story of Colette De Vijvers in Averbode, it was time for a new location, which they found in Westerlo. Here, Thijs returns to the place where his culinary journey began: Tongerlo, Westerlo.
He goes back to the essence, to the place that nourished his passion and shaped his vision. This is his home, as well as that of his grandmother Colette and great-grandmother Anna. Thijs and his wife Lore discovered an authentic former physician's residence that was in need of a thorough renovation. They succeeded in transforming this space into a magical and unique place.
While Thijs creates culinary masterpieces that combine craftsmanship and innovation, Lore, as the hostess, ensures an elegant and warm atmosphere, making every guest feel special and welcome.
