The name Colette refers to Colette Leemans, the grandmother of Chef Thijs Vervloet (born 1990), to whom he owes his culinary talent and hospitality.
Upholding the name Colette as a symbol of quality and authenticity is a matter of honour for us. Every day.

Chef Thijs Vervloet drew inspiration from the refined cuisine of Paris during his gastronomic career in France. He then honed his craft with Johan Segers at ‘t Fornuis and as sous-chef to Viki Geunes at Zilte.
Today, Chef Thijs Vervloet, along with a talented kitchen team, shares his own story. It is an ode to the past, with both feet firmly planted in the present, and a clear vision for the future. Always with great respect for his ingredients and an endless passion for taste and flavour combinations.
